Chicken Salad with Chimichurri Dressing

Ingredients
Chimichurri dressing
- 4 tbsp mayonnaise
- ¼ tbsp red wine vinegar
- ½ cup (¼ oz.) fresh parsley or fresh cilantro
- ½ tbsp red chili peppers, chopped
- 1 tbsp dried oregano
- 1 garlic clove
Chicken thighs
- 1 tbsp olive oil or coconut oil
- 1 lb boneless chicken thighs
- salt and ground black pepper
Serving
- 2 cups (4 oz.) leafy greens
- 1 (7 oz.) avocado, sliced
- ¼ (1 oz.) red onion, sliced
- 1 lemon, cut into wedges (optional)
- ½ red chili pepper, sliced (optional)
