Chicken Salad with Chimichurri Dressing

Ingredients

Chimichurri dressing
  • 4 tbsp mayonnaise
  • ¼ tbsp red wine vinegar
  • ½ cup (¼ oz.) fresh parsley or fresh cilantro
  • ½ tbsp red chili peppers, chopped
  • 1 tbsp dried oregano
  • 1 garlic clove
Chicken thighs
  • 1 tbsp olive oil or coconut oil
  • 1 lb boneless chicken thighs
  • salt and ground black pepper
Serving
  • 2 cups (4 oz.) leafy greens
  • 1 (7 oz.) avocado, sliced
  • ¼ (1 oz.) red onion, sliced
  • 1 lemon, cut into wedges (optional)
  • ½ red chili pepper, sliced (optional)
